A trip in the Italian regions: Calabria and Valle d'Aosta

For example, from November to January, recipes are dedicated to Calabria and Valle d'Aosta cuisines.
Calabria, with its natural beauty and the local traditions, is a hospitable and generous land wich manages to be both sweet and spicy at the same time and so is always intriguing. Here food is based on simple preparation, such as in the traditional bread or is exemplified by its typical produce: fish, cold meats, aubergines, herbs, dry figs, red onions, peppers, and so on. Among the citrus fruits and olive groves grows a fruit which is found only here: the bergamot.
Valle d'Aosta, also called "La Vallée" in the colourful french-provençal language, is a jewel box of precious natural rareness. This territory is made of lakes, eternal glaciers, huge pine forests and medieval castels with an epic charm testifying the peculiar identity of this region. The same identity we find in the taste and flavours of its cuisine. Bovine and ovine species, bred between the traditional mountain and the valley pastures, provide the milk used to produce some of the most famous italian chesses, like Fontina.
